
“Tender with a bitter taste”
This crop has only been recently introduced in Sardinia in the plains of Terralbese, an area which has particularly favourable pedoclimatic conditions for its cultivation. The sugarloaf has large and tender leaves. Its shape is cylindrical, the leaves are green with white veins and decrease in size going from the bottom to the top. Once it is ripe, it becomes white and its taste is slightly bitter.

Healthy and genuine, they are normally eaten raw in salads, grilled or used to prepare vegetarian dishes; thanks to its high fibre content, the sugarloaf chicory has great digestive, cleansing and detoxifying properties.
